Curried Zucchini & Yellow Lentils

I must say that it’s one of my favorite vegetarian dishes which brings back those childhood memories where you sit with your parents and share a warm delicious meal made with mother’s love while watching TV.

Here is the recipe to one of my fav vegetarian dishes!

Start to finish: 35 minutes

2 tbsp olive oil

1 medium onion, thin sliced.

4 garlic cloves

sea salt

turmeric powder 1/2 tsp

cayenne pepper 1 tsp

cilantro

green chilies

2 large zucchini - chopped into small pieces

1 Cup lentils - washed, cleaned

  1. Heat the oil in a large stockpot over medium heat. Add the onion, garlic, and ginger, sea salt, cayenne pepper, turmeric, and cook, stirring often, until the onion just becomes translucent, about 5 minutes. Add the lentils and water. Add enough water to cover the solids by 1 inch, about 3 cups or slightly more for soup style.

  2. Raise the heat to higher and let it bring to boil. Reduce heat to medium-low, cover , and simmer for 20 minutes.

  3. Add the zucchini (chopped) and little water and let is cook for about 5-7 minutes.

  4. Now if the lentils have broken completely to create a thick soup base then turn off the heat.

  5. Add cilantro and green chilies as garnishes.
